Whenever I stop using GFO for awhile, I get algae problems. Once phosphates go high in a tank, they seem to get attached to live rock and sand chemically. You need to keep running GFO to remove the phosphate that leeches into the water once the concentration of phosphate in the water is lowered. At some point, you will get the phosphates down and then you can keep them down using less GFO.

ATI makes a Powermodule unit that includes LEDs with the T5 bulbs. Their old Powermodule did not include LEDs though, so be careful when reviewing.

I have a NIB 9W Turbo Twist UV I'll sell for $60.

When you add water to the salt mix, the alkalinity and calcium in the resulting water are in such high concentration that they combine together and precipitate out as calcium carbonate. There are probably other combinations of ions that will also combine in such a high concentration. We want the corals to do the combining to form their skeleton.

Can a skimmer be too large?

The good skimmers are rated by bio-load. If you don't feed much, there isn't as much to remove from the water.
Most skimmers are over-rated by the manufacturer and I agree that over-skimming is more of an urban myth.
