best thing to hold a probe?

I would use styrofoam and float it. if you make a bracket when you kill your sump pump the whole probe will probably go underwater. Its hard on these probes to get the cord portion wet.

 

Your best having it float so it can adjust with changing water levels. Unless of course its in a section that doesnt change even when the power is out (which most sumps dont have.)

This is actually very innovative and a great idea...This is something I am going to consider...
