Smoked mine also then ate it before pics could be taken :laugh: It was a good day all in all way to much food and beer is there such a thing..........

Do anything special before the smoke?

 

I brined mine for a day before tossing it on the smoker. I run a Weber Bullet for the smoker. I also did a breast on the propane Q with some sprouts.....tossed in a few chunks of cherry for a little smoke......

All I did was rub it in butter and salt and pepper. I used alder and smoked it low and slow for 7 hrs. The last 3 or 4 hrs I turned the heat up to about 350 and just wach ed the temp.

Wow 7 hours......mine took about 3 to 3 and a half at around 290 to 300. The wind messed me up a little yesterday. Had Cherry on the bullet and as always turned out great........eating leftovers now as I type :D

I put it on at 9am and took it off at 4:30. It came off almost black from the smoke!!! I love low and slow!! It was about 100 - 120 for a few hrs!!! Cold smoke is the only way!
